Popular food – sushi
Sushi – a dish with ever-increasing popularity. Unfortunately popularity does not always equal quality, which in Estonia translates into a more conservative approach and keeping the risk low. The well-known the product is, the better it sells – a good example of this are the Western classics, Philadelphia and California, which are natural bestsellers all over the world. Fortunately we have some other products that have also gained a lot of popularity. To list them all would take too long, but we have popular products from baked maki, futomaki and Estonian-style maki categories. Another hit is the pre-made kits or sets.
At the end of 1970s, Japanese companies began to expand to the United States, which means that more and more sushi shops began to pop up there to offer food for local Japanese businessmen. In addition to serving local Japanese, the sushi chefs in the USA worked hard to introduce sushi to Americans but it was difficult to convince locals to eat raw fish. Soon, the California sushi roll was invented and this marks the start of the new fusion-sushi trend. The California sushi roll was perfect to introduce sushi to those unfamiliar with it. More and more westerners began to enjoy raw fish in order to adapt it to the Western culture.
